A restaurant catering menu should be more flexible that you’re regular dining room menu. You can’t simply offer everything on your dining room menu as part of your catering menu since a lot of dishes won’t hold up for the long period time that catered food sometimes requires.
When pricing your catering menu do your homework and find out what other local caterers and restaurants who cater are charging for catered events. Also check out your local grocery store and find out how much they are charging for party platters and meals. Restaurant catering especially for larger parties takes a lot more time than a typical meal in the restaurant dining room. You need to cover the cost of catering including transportation costs so you may decide to tack on a fee or two. Avoid adding too many fees otherwise potential customers may feel like you are trying to nickel and dime them.
Also know what your competition charges for the use of their room. Some restaurants say they cater but aren't really set up for it. Other restaurants get a substantial amount of their revenue from catering. When doing competitive research make sure to ask the restaurant owner or manager how much catering they do and what kinds of events they cater. So it’s quite evident that various restaurants are doing their job regarding these catering services but some of them don’t even want to indulge in this catering business. The source of revenue for many restaurants is there dine in rather than their catering. If a restaurant is known for its great gourmet sandwiches, fried chicken, salads or brownies than it probably offers platters of these items for office and in-home parties.
Sometimes the dishes that a restaurant is known for however don't travel well so the restaurant can't offer its house specialties for off-site events. French fries, soups and other delicate and intricate dishes that aren't designed for catering can't be sold for off-site enjoyment such as in these catering services. So there are restrictions in menus that various restaurants can offer in their catering. So, keeping in view these fact we can conclude that restaurant catering is just a source of revenue to the mainstream restaurants.
